One Filipino chef hopes to change perceptions that Jolo island in the southern Philippines is a lawless hotbed of insurgents. Miguel Cabel Moreno hopes to showcase the unique flavors of his heritage -- through local dishes such as beef broth and roasted chicken. Championing southern Filipino cuisine is a difficult task, Moreno says, but he dreams that one day, Filipinos will see Jolo island – and Mindanao in general – in a different light.
